Last Castle Adelaide Hills Chardonnay is a combination of 2 different chardonnay clones.
The I10V1 clone tends to produce more of the store fruit end of the flavour spectrum. The Mendoza clone tends to offer a nuttiness.
The 2K18 Last Castle Adelaide Hills Chardonnay has aromas of pear, white stone-fruit and citrus blossom complemented by hints of apple, lemon curd and toasted almonds. The palate shows layer of pear and white peach, a creamy texture, and subtle oak nuances. A powerful yet elegantly restrained wine with a lingering finish.
This wine was fermented in 100% French Oak Hogs Heads, 30% new and need stirred for 14 days.
There’s almost a chalkiness to the finish, but there’s plenty of stone fruit, apple and buttered toast flavours, with a gentle almond milk character adding that something extra.
