Description
The Last Castle wine range is a wine range produced for the restaurant market. This wine is made from shiraz from the Rohrlach vineyards in the Barossa Valley and mataro from McLaren Flat.
Both parcels of fruit were crushed, de-stemmed, gently pressed into a 5 tonne open fermenter. After 8 days of hand plunging the wine were racked and transferred to oak. Whilst the shiraz component was picked in 2016, the smaller mataro parcel was from 2015.
Whilst closed at the moment, 2016 was a good vintage and this wine will benefits from a little air immediately after opening.
The 2K16 Last Castle Shiraz Mataro is a rich full flavoured wine with good intensity & power. It is medium to full bodied wine with generous, ripe fruit filled flavours, of plum, black currant & liquorice tempered by a savoury elements of the mataro.
There is a hint of vanilla bean derived from a measure addition of older American Oak with the balance in older French oak 50/50.
True to its roots, it is a ripe, rich, full flavoured Barossa Shiraz from what history will tell we be a good vintage.
