Description
The grapes were hand-picked & gently de-stemmed retaining 25% as whole bunches. The fruit was cold soaked prior to wild fermentation in an open top fermenter. Once dry, the wine was pressed to barrel where is matured for 10 months in French oak. Lees stirred in barrel for 4 months in 25 % new François Frères barriques.
Wild/Indigenous yeast from within the winery fermented the wine. This wine is un-fined, unfiltered. Additives were kept to a minimum and the wine was racked just prior to bottling. This wine is the most vegan friendly wine of all of GISA wines.
The wine leaps out of the glass. It is the most flamboyant wine I have ever bottled. It’s delightfully, morish wine, in a velvety, crossdressing sort of way. It shows aromas of red berry, strawberry and ripe cherry. A charismatic wine with a cherry and plum palate, supported with delicate fine tannin and subtle spice on the very lengthy finish.
Drinking well now, get into it while you can.
